One Pot Taco Soup in Less Than 20 Minutes!

As fall approaches and the temperatures are slightly declining, I am craving my taco soup. This recipe is so quick, easy, and delicious! Even the kids love it!

Ingredients:

  • 1 pound ground beef
  • 1 taco seasoning packet
  • 1 yellow onion
  • 1 can tomato sauce 8 oz
  • 1 can diced tomatoes (undrained) 15 oz
  • 1 can of kidney beans (undrained) 15 oz
  • 1 can of black beans (undrained) 15 oz
  • 1 can of whole kernel corn (undrained) 15oz

Notes:

  • These amounts do not have to be exact. Draining and rinsing is optional.
  • You can definitely include fresh ingredients to decrease the sodium intake; however, we are going for quick and easy here!

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Diced tomatoes
  • Chips
  • Lime

Directions:

  1. Brown the beef and onions. Drain the fat.
  2. Add all other ingredients to the pot.
  3. Simmer over medium heat for 10 minutes
  4. Serve and add toppings!

TA DA!!! SOOOOOO EASY!

P.S. You can double the recipe and freeze the leftovers! It still tastes amazing when defrosted!
