The 6-Ingredient Breakfast Pizza My Kids Can’t Get Enough Of

I’ve mentioned before that I am a working mom living that 3 under 5 life, so my time is precious. I love to cook, but my picky toddlers aren’t always into my recipes. It’s hard to find a good recipe that is both “quick and easy” AND something my kids will eat without a fight. In fact, my oldest is famous around here for asking us what’s for <insert next meal> and immediately replying with “Welllllll, that’s not my favorite.”

It feels like an uphill, if not losing, battle most days. #iykyk

Unless it’s cinnamon rolls, cinnamon roll bites, or donuts, there’s usually a complaint. One Saturday morning, I was looking in my fridge for something to make for breakfast. I had a roll of Crescent Roll Sheet Dough that my grocery order included by accident when I’d ordered Crescent Rolls. And a Sam’s-sized bag of real bacon pieces. And, for some reason, an overabundance of eggs.

I decided to give a breakfast pizza a whirl.

Since I was winging it, I looked up breakfast pizza recipes online. Most of them use white cream gravy as a base, but that is decidedly not my taste (but try it if it’s yours!). Other recipes used a cheese sauce. That morning, I made a homemade cheese sauce, but I’ll be the first to admit it didn’t exactly do a lot for the pizza. The next time around, I decided to use a little cup of Rico’s Nacho Cheese Sauce for the base and OH EM GEE was that the way to go. The nacho cheese gave the pizza the right amount of “kick” it was lacking before.

We’re a bacon family, but feel free to use breakfast sausage, ham, or whatever else you’d like. I like to scramble my eggs with sour cream to make them extra fluffy, but scramble them however you’d normally make them.

The sky’s the limit!

6-Ingredient Breakfast Pizza

  • 1 can of Crescent Roll Sheet Dough (or regular Crescent Rolls with the seams all pinched together)
  • 1 cup nacho cheese sauce (you can use jarred queso dip or even make your own cheese sauce)
  • 4 eggs
  • Sour cream or milk for scrambling the eggs
  • Cooked bacon pieces or crumbled breakfast sausage or ham
  • Shredded cheese
  • Any other toppings you’d like (veggies, etc.)

Directions

  • Preheat your oven to 400 degrees.
  • Cover a baking sheet in parchment paper. Roll out your Crescent Dough into a rectangle and then roll the edges up to form a “crust” all the way around. Spread the nacho cheese sauce over the crust.
  • In a skillet, scramble your eggs.
  • Evenly spread the scrambled eggs over the cheese sauce, then top with the bacon and shredded cheese.
  • Bake for about 15-20 minutes or until the crust is golden brown and the cheese is melted. Slice and serve warm.
