Girl Vs. Grill: Easy 5 Step Summer Fruit Cake

Today on the blog we are thrilled to bring you a fun, lighthearted series in preparation for summer! It’s starting to warm up, the days are longer, the kids are taking swim lessons and we’re gearing up for … summer barbecue season! We don’t know about you all, but our team loves nothing more than relaxing with family and friends during these slower New Orleans days. Girl Vs. Grill: Easy 5 Step Summer Fruit Cake

I tend to leave the actual grilling to my husband, primarily because I do ALL the cooking otherwise. Also, because he loves it. Even though I leave the meat and veggies to him, I like to whip up a little something sweet for afterwards. But, as I mentioned before, when the husband grills, it means a night off for me so I want to keep it as simple as possible. This recipe is so simple to prepare and an added bonus: its delicious and light, perfect for warm summer gatherings. Enjoy!

Ingredients

  • 1  container strawberries, rinsed and sliced into bite sized pieces
  • 1 container of blueberries, rinsed
  • 1 orange, juiced
  • 2 tbsp. sugar (or sugar substitute)
  • 1 pre-made angel food cake
  • 1 large container cool whip

Directions

Step 1: Combine sliced strawberries, the juice of one orange and sugar into a sealed container and let sit for several hours. (I do it overnight)

Step 2: Slice angelfood cake into 1-2 inch slices.

Step 3: Place layer of sliced angelfood cake at the bottom of trifle dish/casserole dish/bowl. Sprinkle with strawberries and blueberries.

Step 4: Top with cool whip.

Step 5: Repeat steps 3 and 4 and end with layer of cool whip.
