Not Your Mama’s Rice Krispie Treats :: Part 2 :: S’mores Bars

If you haven’t already tried my Toasted Marshmallow Browned Butter Bars, you need to put them on your to-make list! They were the inspiration for this recipe series. The addition of toasted marshmallows to Rice Krispie treats really does take them to the next level.

And what goes better with toasted marshmallows than graham crackers and chocolate?

I used this recipe as a jumping off point and added in toasted marshmallows

S’mores Bars

6 tablespoons butter
2 10-ounce bags mini marshmallows
8 cups Golden Grahams cereal
1/2 cup chocolate chips (use milk chocolate chips/chopped Hershey bars for a more classic s’mores flavor)
1/4 cup Golden Grahams cereal, lightly crushed, for garnish
1/4 cup chocolate chips/chopped Hershey bars, for garnish

Spray a 13×9 baking pan with cooking spray (or grease with the wrappers from your butter).

Sprinkle 2 cups of mini marshmallows on a foil-covered baking sheet.

Heat your broiler. Once hot, broil your marshmallows to your desired level of toastiness. Mine take about 90 seconds — WATCH THEM CLOSELY! Set aside.

In a large pot over medium-low heat, melt butter. Once the butter is melted, add the rest of the mini marshmallows and a healthy pinch of salt and stir until smooth. Add in your Golden Grahams and stir until coated.

Using a greased rubber spatula, scrape the toasted marshmallows off the foil and into the pot. Mix in the 1/2 cup chocolate chips.

Spread into your prepared pan and sprinkle with the lightly crushed Golden Grahams and remaining chocolate.

Let cool, slice & serve.
