A Healthy Snack That You and Your Kids Will Love

I have noticed a huge difference in my kids’ mood, behavior and overall, well-being since I have altered their diets. I can share more on that later, but for now, I want to share a healthy snack that we all love.

recipe for no bake energy bitesI was in Trader Joe’s one day looking for all of the yummy things, and I ran into this recipe on the Trader Joe’s Organic flaxseed bag. My kids now snack on these instead of sugary sweets. They even ask me for them, “Mom, do we have any of the sweet bites?” and I often am out of them because of how fast they go. One of my sons even eats one or two for breakfast with milk. These are cold, crunchy, sweet and filling. They are a great snack and source of protein.

No Bake Energy Bites

  • 1 cup of rolled oats
  • 1/2 cup chocolate chips
  • 1/2 cup ground flaxseed meal
  • 1/2 cup of peanut butter or almond butter
  • 1/3 cup of honey
  • 1 tsp of vanilla extract

Combine all ingredients together in a bowl. Form into 1-inch balls using hands. Arrange bites on a sheet or plate and freeze them to set them, about 1 hour.

Pro tip: I spray my hands with Pam before I start because it is a sticky job!
