Holiday Recipe: Decadent Double Chocolate Cake with Cream Cheese Icing

I so rarely bake any kind of sweets because, well, because of will power (or my lack thereof). However, around the holidays, I usually make an exception. My husband has been requesting a recipe of his aunts for years: a chocolate chip pound cake with cream cheese icing. I have avoided tracking this recipe down because to be honest, I am no Betty Crocker and feared I would not be able to duplicate this revered dessert. I have made cakes for him in the past and although he still eats them, I can tell I just don’t get it quite right. I strongly believe that baking is the most difficult cooking method. Anyway, my husband has to work this Christmas so I decided to put on my Santa hat and grant his wish.

Because I plan to make this for him on Christmas, I decided to do a trial run (mostly for the sake of attempting the icing). While we were waiting on the recipe from his aunt, I adapted a recipe I found on google. It turned out perfectly and was super easy! Ingredients

Cake:

  • 1 Box Chocolate Cake Mix
  • 1 Box Instant Chocolate Pudding Mix
  • 16 oz. Sour Cream
  • 3 Eggs
  • 1/3 Cup Vegetable Oil
  • 2 Cups Mini Semi-Sweet Chocolate Chips

Icing:

  • 8 oz cream cheese
  • 1 stick butter
  • 2 cups confectioners sugar
  • 1 teaspoon vanilla extract

Directions:

1. Unwrap cream cheese and 1 stick of butter and place both in bowl. Set aside so that they may reach room temperature.

2. Preheat oven to 350 degree.

3. Mix together all cake ingredients (except chocolate chips) with handheld mixer until smooth and creamy. Fold in chocolate chips.

4. Pour cake batter in greased bundt pan.

5. Bake at 350 for fifty (50) minutes. Remove from pan and allow to fully cool prior to icing.

6. Once cream cheese and butter are room temperature, mix with handheld mixture until smooth. Gradually add confectioners sugar while mixing until light and fluffy. Lastly, add vanilla extract and mix until completely dissolved. Frost cake once cool.

As I said before, this cake is super rich but was a hit. For something lighter, use a vanilla cake mix to dial down the chocolate. Or not.
