Red Beans and Rice :: A Recipe All New Orleans Moms Should Master

The dinner time struggle is real, y’all. Trying to find something healthy, easy, affordable and that my whole family enjoys is challenging to say the least. One thing we don’t stress over is what to eat on Mondays, because in NOLA Monday is red beans and rice day!! On a pretty regular basis,CB-Instagram-v1 we cook some variation of Camellia beans on Mondays. We love trying out new ways to cook them- from the crock pot to the dutch oven, but with a family of five, we strive for simplicity. We were given some of their eight new products to try…hello Chipotle Black Bean Soup! Because we wanted to make something kid approved, we opted for tried and true red beans. Can I just say, this was the easiest way I’ve ever prepped and cooked red beans?! It is a true “one pot” meal!

Ingredients:

1 Bag of Camellia Creole Red Beans Mix
1 Tbsp. of olive oil
1 large onion, chopped
1 green pepper, chopped  (we omitted this because, kids)
2 stalks of celery, chopped
12 ounces smoked sausage or chopped ham
6 cups water
Cooked rice

Directions

  • Rinse and inspect beans.
  • In a large heavy pot, heat the oil and sauté the onions, peppers, and celery over medium high heat for 3 minutes. Add sausage of choice or ham, and sauté 2 minutes creole red beansmore.
  • Add water, beans and contents of spice packet. Bring to a boil.
  • Reduce heat, cover and simmer until beans are soft, about 2 hours, stirring occasionally.
  • For a smoother consistency, you can use the back of a spoon to mash some of the beans on the side of the pot. I love this tip!
  • Serve over rice.

This made a generous amount of red beans. Our family of five had dinner, lunch and a couple of us had dinner again! Our team also loves the fact that there is a crock pot version of this recipe!
