Pink Pineapple Punch

Summer has arrived! It’s time for longer days, flip flops, backyard barbecues and all things summer in New Orleans. I love being able to have dinner cooked on the grill while the kids run around outside (though, you know, not too close to the grill), and I love sitting on the back porch sipping a sweet, summer-y drink, since I’m not the one doing the grilling. I usually experiment with different drinks and come up with my own “signature drink” each summer. My newest creation is Pink Pineapple Punch. Or, Sparkling Pineapple Pink Lemonade. I’m not sure yet what to call it. What I am sure of is that it is delicious and refreshing.

What You’ll Need to Make Four 8oz Glasses of Pink Pineapple Punch:

  • Countrytime (or your favorite) powdered Pink Lemonade
  • 2 cups Pineapple Juice
  • 2 cups Ginger Ale
  • 1/4 cup grenadine (I used cherry juice)
  • Ice

Directions:

Fill a large pitcher with ice and pour in pineapple juice and grenadine. Fill the pink lemonade mix to the 1qt line (about 1/3 cup), add to the pineapple juice and stir until dissolved. Add the ginger ale and mix gently. Garnish the pitcher with sliced lemons, pineapples and/or cherries. Pour yourself a glass of pink pineapple punch, sit back and enjoy either cooking or watching your partner cook.

Optional: Add 2-4oz of your favorite rum to make it an adults only drink!

  1. I am looking for a punch for a one yr old b/day party for tomorrow. Peach Pink, Mint, Gold. (Glittery). are main colors. Then there is white lace, and off white. Wanting something a little different for is Alexandrians/Pineville folks for this time of year.
