Girl Vs. Grill: Lemon Lime Coconut Chicken

Girl Vs. Grill: Lemon-Lime Coconut Chicken

Your taste buds are going to explode when the fork hits your tongue.  Coconut, lemon, lime, is your mouth watering yet?  This main course is simple to make and only requires five main ingredients.  Chicken breast, coconut oil, fresh cilantro, lemon and lime juice are all you need to create a tasty and healthy meal for your family hot off the grill.  If you are like me, you probably have most of these things stocked in the kitchen already, so you won’t have to buy much, if anything to get this prepped, ready for the grill and most importantly, in your belly!

Ingredients

  • Chicken breasts
  • 1/2 cup coconut oil
  • 1/3 cup lemon juice
  • 1/3 cup lime juice
  • 3 tablespoons fresh cilantro
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground pepper

Directions

Place the fresh chicken breast in a plastic storage bag and set aside. Melt 1/2 cup coconut oil in microwave for about 30 seconds or until liquid. In measuring cup, add 1/3 cup lemon juice and 1/3 cup lime juice. Chop 3 tablespoons fresh cilantro leaves with 1/2 teaspoon sea salt and 1/2 teaspoon fresh ground pepper. Mix all the ingredients together and pour over chicken into storage bag.  Refrigerate for about 4 hours, turning occasionally. Fire up the grill and cook chicken on each side for about 6 – 8 minutes. Garnish with fresh chopped cilantro, lemon and lime wedges and dig in. Your taste buds are going to thank you!
