This mama loves a good cocktail. But this mama also walks on the lazy side when it comes to recipes. Does it have more than a few ingredients? And do I have to do something from scratch? PASS. So you can imagine my excitement when I realized that I could make a delicious cocktail that rivals some of the best gourmet cocktail bar creations using snacks that were sitting in my freezer.
The Light Bulb Moment
After a rough day, I decided to start Happy Hour a little early one Wednesday afternoon. I usually stick with wine in my house because the fancy cocktails I like require too much work. Plus, they are usually too many calories to drink while I’m on a health kick (more about that here). Unfortunately, I was out of wine. The only thing alcoholic in our pantry was Johnny Walker Black and St. Germaine Elderflower Liqueur. I chose the St. Germaine and started rooting through my fridge for something to mix with it. I had diet ginger ale, but that seemed so boring. Then I remembered the GoodPops I had recently purchased at the Whole Foods on Veterans. Eureka!
I had a box of the Hibiscus Mint flavor and a box of the Watermelon Agave flavor. If you haven’t tried GoodPops yet, you simply must. This is not a sponsored post, I just lurve this product. They are made of all-natural and organic ingredients; you can actually taste the individual components. And (bonus!) they are very diet-friendly with the Hibiscus Mint flavor clocking in at only 63 calories and the Watermelon Agave clocking in at a mere 48 calories! I knew before I even blended the pops with the diet ginger ale and the elderflower liqueur that these cool cocktails were going to be a game-changer for me.
The “Recipe”
The first time I experimented, I made a slushy version in the blender. Unfortunately, that required a step that this lazy mama hates: washing the blender. The next time I just served it over ice, and it was just as refreshing and delicious. I kind of feel like a fraud calling these recipes because they are so simple, but here goes.
Lazy Mama Cocktail, On the Rocks
- 1 GoodPop – Note: One melted popsicle = 1/4 cup. I tried Hibiscus Mint and Watermelon Agave, but I think the Strawberry Flavor would work equally well with this ingredient combo.
- 1/2 cup of diet ginger ale – Note: I used diet ginger ale to save Weight Watcher points. You can use regular ginger ale or a citrus based soft drink if you don’t like ginger ale (Sprite, 7-Up, Fresca, etc.).
- 1 oz. of St. Germaine Elderflower Liqueur
Instructions: Choose a flavor. Melt the popsicle. Microwave for approximately 60 seconds and then smash whatever is still frozen with a fork. Add the diet ginger ale and elderflower liqueur. Serve over ice (I prefer it with crushed ice.). To make it extra festive, you can also add a lime wedge and mint leaves, but they are not necessary.
Lazy Mama Cocktail, Blended
- 1 GoodPop (1/4 cup melted)
- 1 cup of ice
- 1/2 cup of diet ginger ale (or soda substitute)
- 1 oz. of St. Germaine Elderflower Liqueur
Instructions: Choose a flavor. Thaw the popsicle (Microwave it for about 30 seconds and the popsicle will slide right off of the stick.). Add all of the ingredients to the blender and blend. Pour and enjoy!
Lazy Mama Mocktail
For our pregnant readers out there, the mocktail version of this is delicious as well. Just eliminate the liqueur, and you will still feel like you’re having a special treat!

Hibiscus Mint Cocktail: 3 WW points (Mocktail = 2 points)
Watermelon Agave Cocktail: 2 WW points (Mocktail = only 1 point!)

Next time, I am going to try combining GoodPop’s Strawberry Lemonade flavor with some Sweet Tea Vodka and their Banana Cinnamon flavor with some Kahlua. Yum!
