A Twist to Taco Tuesday

I have recently embarked on a twist to Taco Tuesday. I turned Taco Tuesday into Turkey Tuesday. We sometimes still do have tacos on Tuesdays, just not every Tuesday. I do love a schedule and routine and ease of cooking / dinner prep. But I found myself getting over tacos every Tuesday night.

In an attempt to eat healthier, I had been making our tacos with turkey ground meat for some time now. To me, when adding the taco seasoning, I don’t really find it tastes any different. If you haven tried tacos with ground turkey meat or ground chicken, I do recommend you try it!

So if you are like me, and just aren’t in the mood for tacos EVERY Tuesday but need something quick and easy, here are some of my favorites on Turkey Tuesday. Oh and here’s a secret: they all come from about the same recipe just changing shape or leaving a few items out:

Turkey Meatballs / Turkey Loaf / Turkey Burger

Recipe: (sorry I don’t measure, just go at it like your grandma would)

  • 1lb of ground turkey meat
  • 1egg
  • About 1/3 cup of the creole “trinity mix” with chopped onions, bell peppers, parsley
  • About 2 tablespoons of minced garlic
  • About 1/2 cup of parmesan cheese
  • About 1/2 cup of breadcrumbs.
  • Pinch Salt, Pepper, Paprika

I say “about” because as I said I don’t measure, I just put it in a bowl and eyeball it.

Meatballs – Recipe above and roll into balls, bake in the oven at 425 for 10-15 minutes. Boil the pasta while the meatballs bake and I use a jar of your favorite pasta sauce.

Turkey Loaf – Recipe above and form into “loaf” on a baking sheet. Bake at 425 for about 15-20 minutes. I cook the pasta while the loaf cooks, add butter and garlic powder to the noodles.

Turkey burger – don’t add the cheese, breadcrumbs, and egg. Just the ground meat, minced garlic,  trinity mix, and seasoning. Makes about 4 burgers. Bake at 425 for 10-15 minutes. Prep all the burger fixings while the burgers bake! Add fries in the oven as a side!

There you have it! 3 additional turkey meals you can add into your weekly meal routines you can make in under 30 minutes!
