Quick and Easy Weeknight Dinners

With school and after school activities back in full swing we all need a few quick and easy dinners in our back pocket. Certain dinners lend themselves better to quick preparation, things like stir-fry, salad, seafood, breakfast for dinner, dishes made with ground meat, pasta dishes and vegetarian meals tend to have quicker cooking times making them ideal for busy weeknights. Another quick dinner hack is to take advantage of using shredded meat from a store-bought rotisserie chicken in lieu of cooking chicken yourself for a recipe.
